Italian Pastina in brodo, lovingly known as “Italian Penicillin Soup,” is a delicious and delicate soup. Pastina is the ultimate Italian comfort food that has been cherished for generations. It’s quick and easy to prepare using Brodo House’s rich and flavorful broth as the base, combined with teeny, tiny pastina noodles!

Ingredients

  • 1 container of Brodo House Original or Chicken Brodo

  • 1 box pastina pasta

  • 1 cup freshly grated Parmesan cheese

  • Sea salt to taste

Instructions

  • In a large stockpot, bring the broth to a boil over medium-high heat.

  • Add the pastina noodles and cook for about 5 minutes, stirring occasionally, until the pasta is tender.

  • Stir in half of the cheese.

  • Season with sea salt to taste.

  • Ladle the soup into bowls and, if desired, sprinkle with the remaining cheese.

  • Serve with warm, crusty Italian bread to soak up any extra broth.
